Peanut butter is so popular in many countries. It’s also very popular with my boys. Peanut butter is a food paste or spread made from ground peanuts. It often contains additional ingredients that enhance the taste or texture, such as salt, sweeteners or emulsifiers. 

However, you can avoid these additives if you make your own at home. And it’s so easy to do. You don’t need much more than peanuts and a blender and gives you a massive saving on the shop bought versions of the spread.

Fighting Heart Disease with Vegan Mushroom, Fig and Spinach Pizza

I’m certainly not a Delia or Nigella. And I have no ambition to win MasterChef, however, food is one of the topics I really enjoy writing about on this blog. Whether that’s eating out or creating recipes for dining at home. I love cooking with and for my family, my boys like to get in on the act in the kitchen too, especially trying new recipes and foods, and creating dairy-free and meat-free alternatives to traditional recipes.

So I’m really pleased that I’ve been able to donate a recipe to Heart Research UK, a national charity who fund pioneering medical research into the prevention, treatment and cure of heart disease as well as helping communities improve their lifestyles, and this week my recipe for a vegan Mushroom, fig and spinach pizza was published in their Happy Healthy Heart Cookbook.

I love a baked potato for lunch, especially during the winter months. It’s warming, tasty and also quick and easy to make if you opt for the microwave version – although an oven-baked jacket is so much better!

There are some great toppings out there to choose from, but not all are vegan.  One of my favourites has always been baked beans. Beans and potato just go so well together, but I’ve always cooked it with butter and added grated cheese. This month I’m trying to be not just healthier after the festive season but also a little more vegan too, it is January and Veganuary this month.

How to Make a Caprese Salad - A Simple Summer Dish
