Seven of the Best Summer Soups

Everyone I know seems to have grown courgettes this year. Requiring full sun to grow I’m not surprised that this summer, with the UK heatwave, has been a great season for courgette growers. We’ve acquired quite a few from a family allotment and have enjoyed quite a few bowls of summer courgette soup, creating a new recipe that is now one of our family favourites.

In fact, so many soups are easy to make from produce that is easy to grow in the garden from tomatoes to peas and rocket. It's not only healthy but frugal too - helping us to keep fit and keep money in our pockets. Read on to discover the recipes for seven of the best summer soups.

Are you a fan of burgers? I have to admit the trend for eating burgers kind of happened after I became a vegetarian, so I'm one of those people who has never tasted a Big Mac, Whopper or Byron Burger, however, I don't object to vegetarian or vegan burgers, as long as they taste good! 

The UK burger market may be worth over £3b, but good vegan burgers are hard to find so this summer I've created my own vegan burger recipes.

30 Simple Summer Vegan & Vegetarian Salads

Salads really don’t have to be boring. There is nothing I like better on a hot sunny day than a crisp tasty salad, as either a light lunch or heartier evening meal. The weather this year has just been amazing for Britain. Some Italian friends at the weekend told me that a UK Heatwave is what everyone else in Europe calls summer – we did laugh but it’s so true.

But that doesn’t matter as this year has been a great year for experimenting with new flavours in the kitchen and here are my favourite veggie and vegan salads. They are tasty, healthy and full of flavour And I’ve also asked other food bloggers for their simple recipes … so no excuses not to have exciting salad dishes on the menu this summer.

We’ve been given lots and lots of rhubarb this year. We don’t grow it ourselves as our kitchen garden is too small but a family member does, and there seems to be so much rhubarb this spring. It's a very popular food to grow in allotments in the UK and has amazing health benefits as well as being a great cooking ingredient too.

I remember easting it simply chopped up with a small bowl of sugar to dip it in as a child, and of course there can’t be many people who have not had rhubarb crumble, however, I went looking for new ideas and decided to make jam and vodka.

Easy homemade kids birthday cakes - recipe and decoration ideas

At this time of year, our family celebrates a lot of birthdays. Over the next few weeks, everyone in our household will celebrate their birthday, plus a few other relatives will too. Me and my eldest son even share a birthday. The other thing we all have in common is that we all love cake too!


I love baking and although I may not be the best baker or indeed the best cake decorator, in the world, I do love baking and making birthday cakes. A homemade cake is one of my favourite birthday gifts to give. So in this post, I'm sharing a tried and tested, very simple sponge cake recipe and method, and also some of the simple birthday cake creations I've made over the past few years, just using sweets and chocolate to decorate the cakes. They may not be award-winning designs but they have always gone down well with my boys and their friends.

How to make Peanut Butter at home

Peanut butter is so popular in many countries. It’s also very popular with my boys. Peanut butter is a food paste or spread made from ground peanuts. It often contains additional ingredients that enhance the taste or texture, such as salt, sweeteners or emulsifiers. 

However, you can avoid these additives if you make your own at home. And it’s so easy to do. You don’t need much more than peanuts and a blender and gives you a massive saving on the shop bought versions of the spread.

Fighting Heart Disease with Vegan Mushroom, Fig and Spinach Pizza

I’m certainly not a Delia or Nigella. And I have no ambition to win MasterChef, however, food is one of the topics I really enjoy writing about on this blog. Whether that’s eating out or creating recipes for dining at home. I love cooking with and for my family, my boys like to get in on the act in the kitchen too, especially trying new recipes and foods, and creating dairy-free and meat-free alternatives to traditional recipes.

So I’m really pleased that I’ve been able to donate a recipe to Heart Research UK, a national charity who fund pioneering medical research into the prevention, treatment and cure of heart disease as well as helping communities improve their lifestyles, and this week my recipe for a vegan Mushroom, fig and spinach pizza was published in their Happy Healthy Heart Cookbook.

I love a baked potato for lunch, especially during the winter months. It’s warming, tasty and also quick and easy to make if you opt for the microwave version – although an oven-baked jacket is so much better!

There are some great toppings out there to choose from, but not all are vegan.  One of my favourites has always been baked beans. Beans and potato just go so well together, but I’ve always cooked it with butter and added grated cheese. This month I’m trying to be not just healthier after the festive season but also a little more vegan too, it is January and Veganuary this month.
