Recipe: How to Make Quick & Easy Tomato & Lentil Soup

Tomato soup is one of my favourites and I do like to make my own. It's quick, easy and is a perfect meal for the whole family. Team it up with homemade bread and it's a great family lunch - especially in winter. This recipe is suitable for vegan's and of course vegetarians. It's dairy-free and if you omit the flour to thicken gluten-free too, as well as being budget-friendly.

Quick & Easy Tomato & Lentil Soup


In just over half an hour you can have a pan of tasty tomato soup ready to eat, at a cost of only 25p per serving. If making your own bread, time it so the bread goes in the oven at the start of the cooking period.

Ingredients

  • 1 onion 
  • 1 clove of garlic
  • 2 large carrots
  • 1 potato
  • 1 tin of chopped tomatoes
  • 200g red lentils
  • 1 stock cube
  • 1 tbsp of flour
  • 1 litre of water
  • Mixed herbs

Method


  1. Chop the onion and gently fry in vegetable oil in a large pan.
  2. Peel and chop the garlic, carrots and potatoes and add them to the onion.
  3. Stir in the flour to help the soup thicken.
  4. Add the lentils, water and stock cube, bring to the boil then simmer for 20 mins.
  5. Add the chopped tomatoes and stir well.
  6. Once warmed through blend, or alternatively leave chunky, depending on your preference.
  7. Serve with warm crusty bread - we've tried homemade Foccacia and bread buns recently.

This recipe usually yields at least 6 bowls of soup at a cost of less than £1.50 in total.



1 onion - 10p, 1 clove of garlic - 5p, 2 large carrots - 10p, 1 potato - 10p, 200g red lentils - 50p,
1 tin of chopped tomatoes - 30p,  1 stock cube - 10p, 1 tbsp of flour - 5p, Mixed herbs - 5p

It is also a great way of getting children to enjoy vegetables, and best of all they often ask for this soup!
