With Hot-Pulled Salmon seeming to be the flavour of the moment - well it has hit the IKEA menu - I thought I’d give it a try, well a home-made version anyway.
I decided this was probably going to be too spicy for the kids, so My Boys Club guinea-pig, this time, was boy number 3 (hubby).
So after googling how to make it and checking out the cupboards, on the menu for dinner was Hot-pulled Salmon, topping gnocchi & green vegetables in a light cheese sauce, with a spicy citrus slaw on the side. Making the most of our kitchen garden using the fresh chilli, garlic, runner beans and leeks the other ingredients are available in any supermarket.
Ingredients:
Hot-pulled Salmon:
2 fillets of salmon
A dollop of BBQ sauce
A dollop of BBQ sauce
1 chopped Chilli
1 clove of Garlic (chopped)
Gnocchi:
1 packet of fresh Gnocchi
1 large tablespoon of cream cheese
1 handful of baby leeks (chopped to 1cm)
1 handful of runner beans (sliced and chopped)
Citrus slaw:
1 large carrot (grated)
1/8 white cabbage thinly sliced
1/8 white cabbage thinly sliced
1 tablespoon lemon juice
1 tablespoon organic cider vinegar
1 chopped Chilli
1 clove of Garlic (chopped)
Instructions:
Prepare the ingredients
For the slaw combine all ingredients and let sit for 30 mins.
Cook salmon and Gnocchi as per instructions, adding the runner beans and leeks to the water.
Flake the salmon and mix with the BBQ sauce, chilli and garlic.
Strain the Gnocchi, beans and leeks and stir in the cream cheese.
Top the Gnocchi with the salmon and add a spoonful of citrus slaw.
Cost: Approx. £2.50 per large serving
Time: 15 mins preparation + 5 mins cooking
Equipment: General household kitchen items
Serves: 2 as a main meal or 4 smaller servings
